Bridge’s Rockfish Chowder

- 5 Strips of Bacon, Diced
- 1 Medium Onion, Small Dice
- 3 Stalks Celery, Small Dice
- 1 Large Red Potato, Medium Dice
- ¼ tsp. Cayenne Pepper
- 1 tsp. Fresh Chopped Garlic
- 1 tsp. Black Pepper
- 2 tsp. Salt
- 2 tsp. Old Bay Seasoning
- 1 tbsp. Fresh Parsley
- 1 cup White Wine
- 1 qt. Milk
- 1 qt. Heavy Cream
- 1 lb. Fresh Rockfish (cut into 1/2 inch cubes)
Over medium heat sauté diced bacon until brown and crispy then add onions and salt. Sauté onions for 2 minutes then add celery and sauté for 2 additional minutes. Add garlic, potatoes and remaining spices and sauté for another minute. Deglaze the pot with wine, reduce wine by 1/2, and then add heavy cream and milk. Bring to a boil uncovered, reduce heat and simmer until potatoes are barely cooked-approximately 10 minutes. Add rockfish and cook and additional 5 minutes uncovered.
